Alrighty, so my roomate and I decided we are going to alternate the nights we cook, soooo... After like, 3 months of being spoiled and eating HIS cooking, now I've gotta back my claims up that I CAN actually cook.

I'm trying to stay on a budget, so if anyone has any ideas on good meals to cook-- or just a main dish like the meat part since there are umpteenthousand sides for a dollar I can make. They don't need to be fancy or weird, or perfect.. I can make it up if I have the basics. OR something that will make a couple of meals with leftovers, or it's just effing delicious and makes a lot and can be reheated.

I've found things that keep the price down are cooking with the spices that I already have, and improvising something based on what cheap meat is avaliable on sale. I also get a lot of buy 1 get 1 deals and freeze one. We pretty much don't let anything go to waste here.

AND If I do cook it I'll take a picture and give you credit Smile

But I'm gonna share one in the meanwhile...

"It's Like Stroganoff"

1 1/2 pounds of ground beef
Family size velveta mac and cheese
1/2 red pepper - diced
1/2 yellow pepper - diced
1/2 green pepper - diced
1/2 onion - diced
Garlic Cloves to taste
2 dallops of sour cream
1/2 cup milk
1 can of cream of mushroom
Salt+Pepper to taste

So it's super easy to make, all on the stove top. Throw all the veggies into a large skillet (We use cast iron, so you might need to oil if you don't have a non-stick pan). Cook the veggies until they are no longer so crisp (onions will be translucent), yet not fully cooked. Next the beef is added to the skillet-- you can salt and pepper or season as you like, I reccomend not using a lot of salt.... While you are cooking the beef, boil the shells for the mac and cheese. Once the beef is cooked and drained, add your milk, sour cream, and cream of mushroom soup. Let it cook for a minute and thicken up slightly. Drain your pasta shells, and then add them directly to the large skillet, stir, and add your velveta cheese packet. Let it absorb and set for a minute, and then enjoy a bowl in a meal that's solid in your belly.

It costs about $25 bucks to make from scratch, but it makes a huge batch and you can tweek it if you like, like add a whole pepper or onion, or use more beef. I'm sure more can be done with this too, if it was played around with.

Lentils. Lentils in everything all the time. That's going to be my food life for the next week or so because I made three cups last night which turned into a gigantic lentil mountain of doom. There were 7 of us eating dinner last night and we just barely took off the peak. Holy underestimation! They're frakking cheap too.

what do lentils taste like, is their consistency like black beans? that's what i'd imagine. i could google it but i want to talk to my spank resources. what do you like to season lentils with? i am looking for something new and healthy to replace pasta Smile

this is my favorite seasonal soup and i can't wait to make it - i made it twice last year. it's super easy and really well worth it. i also skip the cranberry compote or whatever. Smile

I just have to say, I love this thread I like to make pasta with pesto, spinach and chicken/tuna/turkey. It's relatively cheap if you get frozen spinach and chicken when it's on sale.

I used to do a delicious dish with spinach, ground turkey/beef/chicken (sale items usually), and then spinach-- either frozen or raw whichever is cheaper or fresher depending on priority-- with onions, garlic and feta cheese. I used this Spinach Salad dressing that's like, 2 for $4 at the supermarket and it doesn't take a lot of it to make great flavor. I'd then use that mixture and put it on rice, or potato, or pasta-- some kind of starchy staple I've usually already got. It's healthy and cheap and makes a couple meals if you do it all at once. I suppose you could even substitued canned chicken or sausage grounds if you wanted, it's a pretty basic staple. Just saute the ingredients together, spinach last as it cooks quick, and then add that dressing in.

And Beth, what's Egg Fries? I've never heard of that, and it sounds like you are totally on my page with the corned beef hash and shepards pie-- and Jacket Potatos? Those sound good as I love any kind of potato.

I happen to love lentils too-- thank you for reminding me. Lentils are a familiar consistincey-- depending on how long you cook them and with what ingredients they can be soft as refried bean paste or a little snap to the outside like a lima bean, usually in a soup or something.

Oh, and total cheap way to get your chili cheese mix-- Bag of corn chips/fritos, can of Roadhouse Chili (or whatever you like, afford), hot sauce, and a 1lb of cheddar or monteray cheese, and a can of those diced peppers with the carrots that are pickled. Microwave everything but the chips (duh.), I do it in layers... like chili, cheese+peppers+hot sauce, chili, repeat... and then just microwave till hot. It's pretty cheap and is great for feeding friends and watching a game or movie and no one has ever complained.

I forgot to say I love squash soup... I'm gonna check out what that needs to be made. I'm gonna look in my recipes for some lentil dishes, I know I have some. I bought a bulk bag once too and just kept adding lentils to everything-- those dehydrated bean bags are great cooked in a slow cooker.

Oh, kinda like breakfast hash browns thing...eggs, fries and beans... Man, eggs are life savers. For 1.29 I get a dozen, get 1 onion, peppers of some sort and a can of SPAM and a sausage. Sometimes I throw cheese into it too, but it's basically the SPAM and Sausage (or bacon) cooked, then the peppers and onion oh oh, and Garlic! added in, then the eggs scrambled, and the cheese. It's filling and not very oh so healthy but everything can be purchased at the kwik stop across the street, lol. But yeah, I've done plenty of variations of eggs with stuff laying around.

Ps, quick delicious appetizer...

Thin cut luncheon ham, onion and chive cream cheese and green onion/scallions.

Put a small spred of cream cheese on ham and place lengthwise peices of scallion and roll up. No cooking, makes a hell of a lot and easy to find the ingredients. Tastes like my favorite parts of the bagel, minus the bagel.

Lentils are way easier to make than beans! You don't have to soak them beforehand. I really don't know how to describe their taste, they're just sort of ... lentilly? They don't require seasoning, but that could be nice. The lentils I made yesterday went together with quinoa and then cinnamon and lemon! Total experiment... worked really well!

Gonna have lentils coming out of my nose though. STILL SO MANY...

Veggie/rice soup. Fill a pot with chicken or veggie soup stock. Throw in a cup of rice, and a bunch of veggies (personal favs include onions, carrot and sweet potato, but really, anything works). You can eat it for days and it freezes well.

Cheap and healthy subsitute-use whole romaine lettuce leaves instead of tortillas. Use chicken, ground beef, veggies, whatever, and use lettuce leaves as giant spoons.

Love the lettuce leaf scooper, it's great with hummus and even roasted veggie couscous... I'm glad you reminded me of it, lettuce is like, 2 something for romaine by the 3 pack.

I'll have to give the rice thing a shot, you do frozen veggies or fresh?

Yeah it was meant to read "Eggs, Fries and Beans".

Oooh for spinach:

Spinach, can of chopped tomatoes and an egg. Tomatoes in oven proof bowl, then spinach, then egg on top. Bake for 20 minutes. Done. Yummy!

I feed my lot on £30 a week for the entire grocery shop. And we eat very well to be fair. And to clarify, by entire shop that includes nappies, cleaning products etc. Food is about £20.

WOAH-- canadians, help me out, I found fresh cheese curds FINALLY down south here in the states. I love fries and brown gravy and I've been wanting to try Poutine for years... do you just make the fries and top it off with the cheese and gravy? Or is it not that simple...
