Me making beer yesterday! Thought I'd document it here and maybe inspire some people the become alcoholics the ever thirsty.


So here we have my ingredients. Mostly Pale malt, some crystal malt and some torrefied wheat. Pale malt is used as a base because it gives it's sugars over easier. If that makes sense to anyone. The crystal malt is a slightly more cooked version of pale malt. It gives a beer more complex sugars that don't ferment and add body and flavour. There are two types of hops. Aurora (Super Styrians) I'm using for bittering and adding aroma and Styrian Goldings that I'll use to “dry hop”


The first step is to turn the 'hot liquor tun' (Basically a big kettle) on and wait for the temperature of the water to reach 'strike temperature' which I'll explain in a bit.


Next step make a cup of tea.


Okay so the first major part of brewing is mashing. Mashing brings the temperature of the grain to where an enzyme can break down the sugars contained within the malt without breaking down too many other parts of the malt. i.e. certain proteins that will make the beer taste rank. The temperature required to mash is between 62 and 68 degrees celcius. (143 to 154 Farenheit) The water added must be warmer to warm up the malt currently at room temperature. This is the strike temperature I spoke of earlier. I 'mash in' (Mix up the water and malt) with a strike temperature of about 73 degrees C (163 F). The mash tun is actually a cool box with a tap added and a manifold on the tap to prevent malt clogging up the tap. This stays nice and warm for 90 minutes.


At 90 minute a bit more water is added, the tap is opened and a cloudy liquid emerges. This is poured gently back in the top until the liquid coming out the tap is clear. At this point the malt in the mash tun (or grist as it is known) starts to act as a filter, removing any floury residue to achieve clarity.


See, that's better.


This is called sweet wort. It's very sweet and tasty. However I have to be careful not to drink it all.


Here you can see the grist with the floury bits sitting filtered on top. More water is added to the mash tun and stirred in. Left for 10 minutes or so and the process of recirculation and collection repeated.


A mash temperature of 63 Degrees C. Perfect for a dry, crisp beer.


Now I measure out my stash….of Hops. Yes it looks like Ganj, hell it smells like it too. It's the same family and sniffing them makes you all sleepy and tired. You tend to sleep well after a day's brewing.


The sweet wort is added to the boiler and a rolling boil achieved. Then the bittering hops are thrown in. The oils in the hops all evaporate so not a lot of taste and smell comes from these hops. However the bitterness is taken from the plant and imparted in the beer.


Here's my rolling boil. Note the proteins forming a scummy substance.


It's an hour and 15 mins til I need to do anything else. So keeping an eye on it, it's my time to go garden. Oh I should note. Boiling should be done without a lid to allow any sulphurous substances to boil off otherwise it smells awful.


After 75 minutes add the aroma hops. These add a slight bitterness as well as a good nose. Some Cargeenan (Irish Moss) is added to coagulate the protein. Then 15 mins later turn the boiler off and I add more hops for a better taste and aroma, IMHO. Allow this to cool. The quicker you can cool it the better the protein drops to the bottom and the better clarity your beer has. NOTE: Anything that touches the boiled liquid 'wort' from this point onwards must be first cleaned then steralised.


When at around 20 degrees Celsius (68F) transfer it to a sterile 'fermenting vessel' I pass it through a sterile sieve to aerate the 'wort' This adds oxygen to the wort to aid yeast propagation. Add yeast to the top. I use a dried yeast, in this case S-04.


I use a sterile hydrometer to measure the 'gravity' of the beer. This reads (at the bottom of the meniscus and not easily capture on camera) 1.048 @20degC. This should end up at 1.010.


Here it is 12 hours later. Fermenting away like a good'un.

Irish or sweet stout?

If you want something akin to guiness there's loads of recipes available and I heartedly recommend gettin Graham Wheeler's How to Brew Your Own Real Ale.

Just remember if you get a recipe then if its really old the hops now aday are a lot fresher when you receive them and therefore more bitter!

Hah, I dunno, it was just the barley mixed with water. It was kind of sweet...

Yes, I did get brewed in the simulator whilst stoned and I enjoyed it immensely. I entered with the deepest feeling of foreboding, but the lady who worked there assured me it wasn't scary!

The whole experience just emphasised how much I love beer! Did you see those amazing interactive tables in the bar? You made things happen by moving your pint. Awesome.

Awesome documentation of the brewing process there, Pod. I have always wanted to brew my own beer....been meaning to give it a shot but haven't gotten around to it yet. When I do I'm hittin you up for advice.

And nice ganja garden you got. ;)

Like the thing I remembered earlier woo!

Yes when brewing it does and the girlfriend doesn't like the smell of it so she just hides when I brew. Me and the other 3 housemates love the smell. Makes it all sleepy-good!

The cheese looks perfect for cheese cake. Goats milk cheese, simple and only a few days ripened is perfect for cheesecake.

Oh how does your garden grow Kayte? If i remember you grow also.

Well I tried to grow tomatoes on my balcony one year but that didn't work. I don't have a garden but recently planted some seeds in pots and took them to work...

It doesn't need to be a seperate brewing shed if you have an electric set up. This works out more economic for the UK as well. Propane setups are usually cheaper for American's though. My brewery takes a little bit of space to store which might not be easy in a small apartment. Though my Fermenting Vessel fits in my boiler and all my brew kit fits in my mash tun.

There is a way of brewing with pretty much 2 buckets. That wouldn't be too much storage and you could realistically use one of them as a laundry basket on non brewing days with one sat inside the other. I can find some info on people who do it that way if you want?
